Cut avocados into cubes or slices. Mix with juice of ½ lime, ¾ tsp salt, and black pepper. Set aside.

Slice bell pepper into thin strips. Optionally sauté in oil for 3–4 min to soften.

For sauce, mix mayonnaise, hot sauce, and juice of ¼ lime.

Pat tuna dry, cut into cubes or strips. Season with 1 tsp salt, black pepper, and chili pepper.

Heat skillet very hot, add oil. Cook tuna in batches, 45 sec–1 min per side.

Immediately toss cooked tuna with soy sauce and sesame oil.

Toast tortillas in a dry skillet or with a little butter, 1 min per side.

Assemble: spread sauce, add nori, tuna, avocado, and bell pepper on each tortilla.

Finish with sesame seeds and fresh lime juice before serving.
