This is our family’s favorite dish! We have to eat it 2-3 times a week to be satisfied!

Blanch the pork ribs in boiling water. I usually skip this step if I buy clean pork.

Heat a skillet over the stove. When the oil is hot, add the ribs and fry until lightly golden, then remove. Don’t over-fry or the ribs will become tough.

In a bowl, mix the fish sauce, brown sugar, vinegar, lemon juice, and chili with about 1 small bowl of water. (I use a tablespoon to measure.)

In the same skillet with the oil from frying the ribs, sauté the shallots and garlic until fragrant, then add the tomato and stir briefly.

Pour the sauce mixture and ribs into the skillet. Simmer on low heat until the sauce is almost gone and the ribs are tender (about 15 minutes). Transfer to a plate and serve.

These ribs are delicious served hot with rice. Enjoy!
