📌Chiba Dhokli (also spelled Chhiba Dhokli) is a traditional, healthy, and nearly *VISRATI VANGI* -- forgotten or lost recipe of Gujarati snack originating from the Kutch region.
📌Made primarily from gram flour (besan), it is similar in taste to *KHANDVI* , but features a fascinating, gravity-defying steaming technique.
📌 Instead of being cooked inside a steamer, a thick batter is spread onto a steel plate, which is then flipped completely upside down and placed over a pot of boiling water. The steam cooks the batter directly without it dropping into the water.

Steps

Take a mixing bowl, add besan, salt, ginger chili paste, asafoetida, turmeric powder, kasuri methi and sugar. Mix well. Gradually add water as required to make semi thick consistency batter make sure it it should be lump free batter.

Add lemon juice, oil, and chopped coriander. Mix well. Add water in a steamer, or deep pan, on a medium flame to steam dhokli. Take a chiba.

Spread dhokli batter on a chiba. Don't grease it. Make sure it should be a very thin layer. Sprinkle red chili powder on dhokli batter. Keep chiba inverted upside down and placed directly on a boiling water kadai. Allow to steam 3 to 4 minutes.

Once steamed, brush it with peanut oil. Cut in pieces. You can sprinkle mango pickle dry masala. Ready to serve.

Enjoy immediately when hot. It is paired with a cup of hot masala tea and mango pickle dry masala.
