The name Snow balls itself will give you a picture how it would look like, isn't it? Actually, these small snowy balls has many names. Mexican wedding Cakes or Russian Tea Cakes or Christmas cookies etc. But i feel that the name SNOW BALLS is apt for this wonderful melt in mouth cookies. Another highlight for these cookies are that they are eggless.

Ingredients

8-serving
  • 1 1/2 CupsAll purpose flour
  • 2/3 CupButter
  • 1/3 Cupsugar Powdered
  • 1/8 TeaspoonSalt
  • 3/4 TeaspoonVanilla essence
  • 2/3 CupCashew nuts , chopped
  • sugar Powdered

    Pre heat microwave oven - convection mode at 175 degree Celsius. In a deep bowl, beat butter, vanilla essence and sugar using an electric hand beater till soft and creamy.

    Add salt, maida and chopped cashew nuts into it. Mix well using a wooden spoon. Line a butter paper on a baking tray. No need to grease it.

    Take about a tablespoon of the dough and roll into balls and place them on the baking tray.

  4. 4

    Put the baking tray in the pre heated oven and let it bake for about 15 minutes. Check in between. Don't allow them to turn brown. Its better to under cook them than to over cook them.

  5. 5

    Take off from the oven and take the balls from the tray when you are able to handle them. Roll them in the powdered sugar when they are still hot.

  6. 6

    When they cools completely, roll them again in the powdered sugar. Serve them along with tea or coffee.
