Plain boiled white rice fried in Indian style (Indian version of the Chinese fried rice). Easy to cook and tastes yummy.
Steps

Boil the 2 cups rice in 4 cups water. Keep aside.

Heat oil in a pan on medium heat and add cumin seeds till they splutter. Add chopped onions and let them get transparent. Add chopped garlic. Mix well and let it cook for a minute.

Add the ginger, green chilli and tomatoes. Mix well and add salt, red chilli powder and turmeric powder. Mix well and let everything cook for about 2-3 minutes.

Add the boiled rice to the pan and mix thoroughly. Let it fry for about a minute and serve hot with curd, pickle, chutney or raita. It can be garnished with coriander leaves if you want.
