A very quick and easy breakfast with some vermicelli or semiya which you can get anytime at a store nearby, with the available vegetables...it just takes 45 mins and your family will love it...or just you can enjoy!

Roast the vermicelli in little ghee for around 2-3 minutes.

In a medium nonstick kadai, splutter some mustard,jeera and curry leaves in remaining ghee. Saute the dals,chillie and nuts well till golden and nice smell. Then saute the onions,till translucent with a little salt.

Add the vegetables along with the turmeric and hing/asafotedia. cook covered for around 2 mins till nicely done.

Add the water and let it boil. check the salt to taste and add if needed. Put in the roasted noodles and stir well. Let it cook on a low to medium for around 1 minute covered. Uncover and put the coriander.

Again let it cook till all the water is absorbed and the vermicelli is nicely soft and dried up. Squeeze little lemon juice for tanginess and thats it.

Serve hot with tomato sauce!!!
