In a pan heat water and put in the sugar and stir until dissolved.

Once dissolved increase the heat until the syrup thickens and turns a light golden brown. Do not stir as sugar will crystallize.

Once it reaches a sticky consistency add finely chopped red chillies.

Spoon over vanilla ice cream.
