After taking it out, I realised my cake was a tad bit undercooked at the bottom. I put it back in the loaf pan up-side-down, and it went into the oven for about 10 minutes at 175 degrees.

Pre-heat the oven to 175 degrees.

Grease the sides of a 9x5 inch loaf pan or a 9-inch round cake pan with oil. Line the bottom with parchment paper.

Whisk together the yogurt, oil, salt, sugar, lime rind and juice. Add the eggs one by one, whisking between every step.

Sift the flour and baking powder into your yogurt batter. Stir until just combined. (Do not whisk after adding flour).

Pour batter into the prepared cake pan and bake for 45 minutes or until the top is golden brown and a knife inserted in the center comes out clean.

Transfer the pan to a cooling rack and let stand for 10 minutes. Run a knife around the pan to loosen.

For an extra tanginess, serve with grape sauce.
