Yam, Sweet Potato and Beet Mash

In our house we have stopped eating potato, hence, this creative mash was born as a substitute for mashed potatoes; a favorite of my kids'.
The yam, sweet potato and beet mash was paired with callaloo and Island Grain Brown Rice. The kids loved it, that's the most important part! Hand squeezed orange juice is a must with callaloo and beets since Vitamin C increases Iron absorption. Daddy spiked his with Angostura Bitters!

Ingredients

  • 1yam small steamed
  • 1sweet potato small steamed
  • 1/2beet root grated finely
  • 1 tbspbutter
  • 1/4 cupcheese grated
  • 1/4 cupmilk or more
  • Handfulchives of chopped
  • to tasteSalt

Steps

  1. 1

    Mash sweet potato and yam together until creamy.

  2. 2

    Add beet root and combine until creamy.

  3. 3

    Add butter, cheese and salt and mix.

  4. 4

    Add milk, add more if required to achieve creaminess, but not too much to be too liquidy.

    Add chives and mix.
