Preheat oven to 425*

Add 2 Tbsp olive oil to a large saucepan over medium heat, then add onion, garlic and a pinch of salt.

Whisk in flour then broth.

Add milk and bay leaves then stir. Simmer until thickened, about 10 minutes. If it isn't thickening, you can add 1-2 Tbsp flour at a time until thick.

Add the rest of the veggies and cook 4-5 minutes. Taste and adjust seasoning, adding salt and pepper as needed.

Discard bay leaves. Place mixture into pie crust, a casserole dish, or ramekins. Top with dough. You can brush with melted butter if desired.

Bake on a cookie sheet 14-17 minutes.

Can be made ahead and frozen. Bake at 425* for 20-30 minutes.
