Macaroni & Cheese Cups
A great handheld dish for gatherings!
Steps

Preheat oven to 375 degrees.

Spray 8-12 cups of your muffin pan with cooking spray or brush with oil.

In a large bowl, combine the crushed Ritz crackers, 1 cup shredded cheddar, and the 4 tbsp of melted butter. Mix together until the mixture holds together. Press the mixture into your greased muffin cups and slightly up the sides.

In a large bowl, combine cooked (still hot) macaroni, 1/2 cup shredded cheddar, 2 tbsp of cold butter, and the garlic & herb cheese spread. Mix until thoroughly combined.

In another bowl or Pyrex measuring cup combine milk, sour cream, eggs, salt, and red pepper flakes (optional). Whisk well until thoroughly combined.

Add the liquid mixture to the macaroni mixture and mix until all ingredients are combined, melted and smooth. Place 2-3 tbsp of the finished mixture into each muffin cup, distributing it evenly among the number of cups prepared.

Top each up with the remaining shredded cheddar. Bake until lightly golden on top, around 20-25 minutes.
Tips
You will likely have some extra macaroni mixture left. I typically throw it into a small glass baking dish and crush some additional crackers up to top it with and bake it for 20 minutes, which makes around 2 portions of good ol' macaroni & cheese.
