I think we all love pasta - or some form of it in every country. I tried many recipes to one of my favourite restaurant treats but it was always too messy and never anywhere near as good. Until I mixed a few recipes together and WOWOWWWeeee is this good. I made a small 2 portion today but easy to batch make and freeze for a great family dinner or a party. - ENJOY :P

For the meat: heat frying pan and add 1/2 tbsp olive oil the brown the meat. You want it nice and browned all over. Its ok if clumps together abit. Then allow to cool you can press out the lumps with the back of a spoon.to a bowl

Heat the rest of the oil and fry the onions and carrots on medium low - you want to cook them not too brown. About 8 mins. Then add garlic and cook for 2 more mins. Then deglaze pan with red wine and get all those lovely brown bits. Add chopped tomatoes, puree, stock cube, herbs, sugar, and stir then milk cover and simmer for 20 mins. Then adjust seasoning if needed.allow to cool (Wow my kitchen smells amazing :P)

For the sauce: in a sauce pan heat the butter and sprinkle in the flour, use a spatula to mix into a paste and cook for 1 min. Then add the milk and blend until smooth, heat until thickend. Add everything else (apart from Parmesan) and warm to combine.

For the pasta: combine everything in the bowl of your stand mixture on low setting using dough hook. Once combined increase speed and kneed for 3-4 mins until a smooth dough is formed. Then remove from bowl and cover in clingflim. Put on counter for 30 mins upto 1 hour to rest.

Cut into 2-4 pcs and then roll out the dough to a long strip about 0.2mm thickness or use your pasta roller and pass through until the desired thickness. Trim so a rectangle and then into pcs about 15cm long.

To assemble: if eating straight away pre heat oven to 200c. Put some of the sauce into the bottom of an oven proof dish. Then take a pasta sheet add add 2-3 spoon fulls of meat sauce and make into a tube shape carefully lay on the sauce and repeat. I must admit I like alot of meat sauce to pasta ratio but up to you.

Then cover with remaining white sauce. Sprinkle with the Parmesan and bake in oven for 30-40 mins until bubbling and golden brown on top.

Serve hot with an amazing green herb salad (see recipe) - wowww great meal and all the veg hidden from the kids :P - enjoy :P
