Cooking Instructions

In a pot, add the potatoes and enough water to almost cover them. Boil for 40 minutes. Remove and cut them to cool.

Once the potatoes are cool, peel them and mash them. Add the grated cheese (if you don't have cheese, you can make them without it) and mix well.

Add the egg and mix well. Form into balls and flatten slightly to make patties.

Place rice flour on a plate and coat the patties.

They should look like this once coated with flour.

Heat oil in a pan and add the patties (enough oil to almost cover them). Once they are golden on the bottom, carefully flip them.

Cook them on the other side until golden on both sides, then they're ready.

Drain them on paper towels.

I served them with red rice and vegetables. They also go perfectly with sunny-side-up eggs for breakfast!
