This chutney is perfect side dish for vada or pesarattu (whole green moong dal dosa).
Steps

Clean ginger,peel it and chop into small pieces.Clean and chop tomatoes also into small pieces.

Heat oil in sauce pan.Add urad dal,fry little and them add red chillies and fry them.Remove it in a plate and then add the ginger in pan and fry till the raw smell goes off.Add tomatoes and fry little.

Take the fried urad dal and red chillies in grinder pot and grind it into powder.

Then add the ginger,tomatoes, tamrind, jaggery and salt and grind it into smooth chutney.

Heat oil in small wok.Add mustard seeds and hing and allow it to splutter andf mix this into chutney.Garnish with curry leaves.

Chutney is ready to serve with dosa or vada or plain rice.
