Rinse well all the ingredients, cut the pigeons into 4 parts each.

Boil ginko nut then peel.

Fry the garlic and ginger, when the garlic turn golden brown, put in the pigeons.

Then put all the chinese herbs into the wok. Season it with soy sauce, shao xing wine (add extra salt ond sugar as needed).

When the aroma comes out, we can move it to the steamer. Steam for 2 hours until its meat tender.
