
Kale and Goat Cheese Scramble

Heat a cast-iron or nonstick skillet and heat oil or butter. On medium heat, add garlic and sauté, stirring frequently for one minute, then turn heat to high and add kale and 1/2 c water.

Cover and cook for 3 minutes. Remove lid and stir until water is almost completely evaporated. Season with salt and pepper, and remove to a bowl. In the same skillet (you may need to wipe it out with a paper towel), add a bit more oil or butter; then add the eggs, scramble until mostly done, ad stir in kale.

Just before removing the eggs, sprinkle on the cheese. Serve with toasted bread wit olive oil or butter.
