I bought these vermicelli sheets at the supermarket—they’re convenient and delicious.

These are dried vermicelli sheets in a package. Just bring water to a boil, add the sheets, cover, turn off the heat, and let them sit for about 1 1/2 minutes. Drain well. Add 1 tablespoon of oil to the boiling water before cooking the sheets.

Rinse the pork belly thoroughly and pour boiling water over it.

Marinate with 1 teaspoon crushed coriander seeds, black pepper, 2 tablespoons soy sauce, and 1 tablespoon seasoning powder. Since I made this for dinner, I prepped it in the morning and kept it in the fridge. (Before marinating, poke the pork with a skewer so the flavors absorb.)

Grill the pork over hot charcoal.

Once grilled, set aside.

Drizzle the vermicelli sheets with scallion oil.

Let the pork cool, then slice thinly. The skin will be crispy and fragrant. Make a sweet and tangy fish sauce with pickled carrot and lime juice. You can wrap the vermicelli sheets with pork and vegetables for a delicious meal.
