Sweet Potato Salad with Mustard Dressing

I grew Japanese sweet potatoes/yams (they're the purple ones with white-yellow center) in my garden and came up with this recipe! I liked the tartness of the mustard & vinegar in combination with the sweetness of the yams. Add a bit of yogurt to make it cream :)

This should be good with other kinds of sweet potatoes too. You could substitute the cilantro/coriander with other fresh herbs like parsley or dill.

Ingredients

4 servings
  • 2big Japanese sweet potatoes or yams (or other kind is okay too)
  • handfulfresh cilantro/coriander
  • to tasteblack sesame seeds (optional)
  • DRESSING:
  • 1 Tbspwhole grain mustard
  • 1 tspDijon mustard
  • 1 Tbspyour favorite vinegar
  • 1/2 tspsugar
  • to tastesalt & pepper
  • 1 Tbspolive oil
  • 1 Tbspyogurt (optional - for creamier dressing)

Steps

    Scrub the skin of the sweet potatoes well and cut them into bite-sized cubes. Steam them until soft but not too mushy!

  2. 2

    Set the sweet potatoes aside in a colander or bowl and let them cool for 20 minutes or so. Meanwhile prepare the dressing.

  3. 3

    Put all the dressing ingredients into a small bowl and mix well. Adjust taste with salt, pepper and sugar if necessary. Also, chop up the cilantro/coriander.

  4. 4

    Once the sweet potatoes have cooled, put them in a large bowl and toss them in the dressing. Add the chopped cilantro and mix in lightly.

    I like to sprinkle on black sesame seeds to garnish because it goes nicely with the bright color of the Japanese sweet potatoes ^^

sounds like Turkish potato salad,except we don't use yogurt and we do not have sweet potato.. :)
