Ginger and lemon turkey (or chicken)

Even though daily cooking tends to be quite repetitive, sometimes you stop making something for no clear reason. The other day my eldest son was fondly remembering a chicken dish I used to make for a quick and tasty school day dinner years ago. So I made it as a Summer lunch today, using turkey instead of chicken, and happily it tasted the way he remembered 😊

Ingredients

3 servings
  1. 4fillets turkey or chicken
  2. 2lemons
  3. 1 pieceginger
  4. 1little oil (I used olive, but sesame would work nicely)
  5. 1 tsp.sesame seeds
  6. 1red chile (optional)
  7. salt and pepper

Cooking Instructions

    Squeeze the lemons and get the ingredients together

    Peel and grate the ginger coarsely like this

  3. 3

    Mix the lemon juice, ginger and sesame seeds and pour over the meat

  4. 4

    Add salt and pepper, mix well and leave for 15 minutes while you make whatever side you have planned (mine was coleslaw and baked new potatoes whichnI out in a hot oven before starting)

    After 15-20 mins the meat will have absorbed much of the lemon juice

    Heat a little oil in a non-stick pan and cook the turkey or chicken pieces on a high heat

    You'll need to do them in a couple of batches

    Serve when ready. Enjoy!!!

I don't usually have much time my recipes tend to be quite quick and simple and (mostly!!) healthy too. Also quite seasonal because I prefer buying fresh local produce as much as possible. However sometimes, when I do have more time, I like to spend a few hours making more time-consuming recipes and filling my kitchen with delicious smells and great music.
