Potato is not a big part of Chinese people's diet. This dish takes a long time to prepare because of the way the potato needs to be cut. But it's worth the effort.

Peal the potato and slice into thin strips

Wash the starch off the potato strips and leave to dry
- 3
Cut the green pepper into thin strips
- 4
De-seed the chilli and cut chilli into strips
- 5
Remove skin from garlic and cut in half
- 6
Heat up the oil in a wok and then add the garlic and chilli. Cook until you can smell the aroma
- 7
Add the potato and fry until the potato becomes transparent
- 8
Add the salt and chicken powder little by little while you are frying. The potato should still be crunchy when served.
