Light and Summery Strawberry Cake by Akis

This is a very easy strawberry cake that Akis Petretzikis made this morning on his show, and I rushed to try it and take it as a gift to an aunt who is celebrating.

To make the whipped cream successful, the heavy cream must be cold. Akis emphasizes this on the show. If I add liqueur or brandy to the sponge cake, it might not be liked by kids, so it's okay to skip it as it's optional. For the last layer of whipped cream, I added a little red food coloring to make it pinker. If you don't have it, it's not necessary. It was my personal touch.

First, make the jam so it's cold when assembling the cake! If you have store-bought strawberry jam, skip this step.

After washing, cleaning, and quartering the strawberries, put them in a saucepan with the sugar, brandy (or lemon), 1 vanilla, and a pinch of salt. Let it simmer, stirring occasionally, until it thickens and the juice is absorbed. Be careful, as the saucepan should be relatively deep to prevent overflow. It's okay if there are some strawberry pieces left at the end.

For the cream, put the cheese and sugar in a mixer and beat until the sugar dissolves well and there are no lumps. Then add the cold heavy cream and 2 vanillas, and continue beating until you have fluffy whipped cream. A hand mixer works just fine too.

Assembly: Cut the remaining strawberries in half after washing them well, so they have volume. Place one sponge cake layer, and if desired, brush it with some liqueur or brandy, but it's not necessary. Arrange strawberries around the edge with their tips facing out to hold the whipped cream and jam. Spread half of the jam in the center (make sure it's cold if homemade, or it will dissolve the sponge cake). On top of the jam, spread 1/3 of the whipped cream and 4-5 strawberry pieces to hold the next layer.

Place the next sponge cake layer and repeat the process from the previous step.

Finally, place the third sponge cake layer and do the same as in the previous steps, but now without jam, only whipped cream. Decorate with the remaining strawberries and a little fresh mint, and off to the fridge.
