Red fish Smørrebrød med Agurksalat (cucumber salad)
Danish dish inspired by my Nordic travels and a friend's cucumber salad recipe. Made with home grown cucumber straight from the garden!
Steps

Using a guillotine or box grater finely slice the cucumber 🥒 and fennel (tops included)

Salt the cucumber and fennel and using kitchen towel squeeze out the excess liquid

In a bowl add the vinegar, juice from the lemon, garlic, salt and pepper to season
- 4
Add the paprika and yogurt. Taste and season again if needed. Salad = done.

Heat a pan on a high heat. Season and oil the fish and the pan.

Sear the fish skin side down. Hold the fish down for a few seconds to flatten the skin so it becomes crispy.

Smash the avocado 🥑 and season. Then place on top of the rye bread

Once the fish is almost cooked turn and cook for 1 min
- 9
Serve. "God appetit"
