1whole chicken
1 1/2 tspkosher salt
1 tspdried rosemary
1 tspdried basil
1/2 tspgarlic powder
1/2 tspmustard powder
1/2 tspsmoked paprika
1/2 tspblack pepper
1/2 tspdried thyme
1/4 tspcelery seed
1/4 tspdried parsley
1/8 tspground cumin
1/8 tspcayenne pepper
1/8 tspchicken bouillon

Steps

Preheat oven to 450F.

Mix all dry spices together thoroughly

Dry chicken with a paper towel, then rub skin with olive oil. Salt the interior with kosher salt

Liberally apply spice mix to all surfaces of the chicken

Roast until internal thigh temperature reaches 165F, approximately 1 hour
