Ingredients

2-4 servings
  • 1 quartwater
  • 1 tablespoonsalt or to taste
  • 1 teaspoonred pepper flakes
  • 1/2 teaspoonoregano
  • 15 ouncehominy
  • 1 teaspooncilantro
  • 1 teaspoongranulated garlic powder
  • 1large diced onion
  • 1large lime cut into wedges
  • 8 ouncesbeef tripe

Steps

  1. 1

    Boil the water add all the spices and onion

  2. 2

    Slice the tripe into bite sized pieces and add to the liquids. Bring back to boil for 20 minutes.

    Bring to a simmer for 3 hours.

  4. 4

    Add hominy in the last 30 minutes of simmering.

    Serve with lime wedges.
