Crispy Skin Chicken W/ Sour Cream and Chives Mashed Potatoes

Ingredients

  1. 4chicken thighs with skin on
  2. Salt and pepper
  3. Vegetable oil
  4. For mash potatoes**
  5. 5-6medium potato
  6. 200 gsour cream
  7. 1 tspChives (chopped) dry or fresh
  8. 1 tspcrushed garlic
  9. Salt n pepper

Cooking Instructions

  1. 1

    Trim excess fat and remove bones (if any)

  2. 2

    Peel, slice and wash potatoes. Boil in medium sized pot

  3. 3

    Heat vegetable oil in a medium pan on high. Season with salt and pepper

  4. 4

    Add chicken to pan Skin side down.

  5. 5

    Cover with a lid and cook for 3 minutes on medium heat.

  6. 6

    Crack more salt and pepper on chicken and turnover and repeat the process.

  7. 7

    After flipping the chicken twice on each side. Put into a preheated broiler skin side up and cook for 10 minutes.

    While chicken is in the broiler. Mash potatoes add the sour cream, chives, garlic, salt and pepper.

    Plate up and serve.
