My mother inlaw was a lovely Japanese American lady. She would make sushi, ribs and all sorts of delicious Japanese foods for New Year's. It's a family tradition that I'm doing my best to follow. Mom's Somen Salad is one of our favorites, and I hope you'll love it too! Happy New Year!

Ingredients

12 servings
  1. Salad
  2. 1 lbsomen noodles, boiled
  3. 1 headice berg lettuce, shredded
  4. 1/2 lbboiled ham (from deli) shredded
  5. 1/2 lbchar siu pork (find in asian market, or make @ home) shredded
  6. 2eggs, thin sheets, shredded or scrambled
  7. 1red/white kamaboko, shred into thin matchstick pieces
  8. 3green onions, slice
  9. 2chicken breasts, cooked and shredded
  10. Salad Dressing
  11. 2 tbspsesame seeds, crushed
  12. 4 tbspsugar
  13. 2 tspsalt
  14. 6 tbspvegtable oil
  15. 2 tbspsesame oil
  16. 6 tbspvinegar
  17. 4 tbspsoy sauce (shoyu)

Cooking Instructions

  1. 1

    Lay boiled somen in a 9×13 casserole.

  2. 2

    garnish with remaining ingredients.

  3. 3

    Combine salad dressing ingredients and stir until sugar dissolves.

  4. 4

    Evenly distribute dressing over salad.

  5. 5

    cover and chill well.

  6. 6
