Ingredients

  • 1 cupall-purpose flour (about 120 grams)
  • 1 cupsemolina flour (about 160 grams)
  • 1 cupsugar (about 200 grams)
  • 1 cupshredded coconut (about 80 grams)
  • 1 cupmilk (about 240 ml)
  • 1/2 cupvegetable oil (about 120 ml)
  • 3eggs
  • 1 tablespoonbaking powder (1 packet, about 12 grams)
  • Pinchvanilla
  • 1little vegetable oil for greasing
  • 1 cupsimple syrup (about 240 ml) for soaking

Steps

  1. 1

    Mix all the ingredients together with a spoon, then pour the batter into a greased 10- or 11-inch (26 or 28 cm) round baking pan.

  2. 2

    Bake in a preheated oven at 350°F (180°C) on the middle rack.

  3. 3

    When it's cooked through and the top is golden brown, remove from the oven.

  4. 4

    Pour 1 cup of simple syrup over the cake while it's still hot.
