Coconut hotcakes

Cooking Instructions

Place all ingredients on food processor, blend. Mix done.

Add a small amount of oil to a frying pan & spoon in desired amount of mix for whatever size hotcakes you wish. Cook until golden then place in oven for 3/4 minutes until cooked through. Serve with maple syrup, bacon, fresh fruit or whatever takes your fancy!

I cheated, and used a can of frosting because I'm too lazy to learn how to make real frosting. Remember to double the ingredients if you're making two cakes. The cake recipe calls for simple ingredients, and that's why I love it. :) Enjoy if you do try it! Teodora T.
