Cooking Instructions

In a 4 qt. pot over med to med/low heat add enough oil to cover bottom of pot and heat. Add onions, peppers and garlic (optional sun dried tomatoes). Cook a few minutes then add butter and finish cooking until onions are translucent.

Add canned tomatoes and heat thoroughly. If you get stewed tomatoes make sure to slice them before adding them to the pot.

Add fish cover reduce heat to just below med-low and set timer for 5 minutes.

Gentle turn over pieces of fish to prevent them breaking apart. Continue cooking for 5 minutes more. If you're going to use shrimp, place them into the pot 3 minutes PRIOR to final cook time.

Now that excellent fish stock can be made from shrimp bouillion cubes, I no longer simmer whole fish overnight. The shrimp bouillion is used to make soup from braised tomatoes, carrots, celery, onion, garlic, potato, fennel, saffron, herbs, all fresh from the garden. Just before serving, frozen white fish, frozen cooked mussels and frozen raw shrimp are added. Served with Sour dough bread with a special sauce called rouille. This warm stew is nutritious, prevents colds, and has plenty of carrots.If you really sear the meat well at first before adding the wine, it ends up delicious. I usually add mushrooms and potatoes when I make it, but when I make it to freeze I leave out the potatoes. When adding potatoes, add them in during Step 5 as you add the can of demi-glace sauce.
