Sausage & Potato Casserole

Ingredients

45 mins
  1. 2 lbRed Potatoes, wedged (Simply Potatoes works well)
  2. 2 lbSausage (whatever kind you like)
  3. 1large onion, chopped
  4. 1 1/2 cupSweet Bell Peppers, chopped
  5. 2 canMushrooms
  6. 1 packagesFrozen Corn
  7. 2 clovegarlic
  8. 1Fish or Chicken Fry (enough to coat potatoes)
  9. 1Salt & Pepper to taste
  10. 1 stickButter (melted)

Cooking Instructions

    Preheat oven to 375

  2. 2

    Toss Potato wedges in Fry batter.

  3. 3

    Place coated potatoes on large cookie sheet (single layer), drizzle melted butter over potatoes and bake for about 30-45 minutes.

    In large non-stick skillet, saute peppers, onions & garlic.

  5. 5

    Slice sausage and add to skillet. Cook until browned.

  6. 6

    Add mushrooms and corn to skillet...cover and cook 5 minutes. Drain excess greese.

    Put sausage mixture in large serving dish, add potatoes, mix and serve.
