1 largeonion, chopped
5celery
1 packagesbaby carrots
1 packagesfrozen corn
2 candiced tomatoes with Rosemary and oregano
2 candiced tomatoes with spicy red peppers
1 cangreen chilies
2 cansliced olives
4 largeboneless skinless chicken breasts
3 1/2 tbspground cumin
2 1/2 tbspchili powder
4 tbsptaco seasoning
1salt and pepper to taste
3 tbspreal butter
3 quartchicken stock
1 tbspItalian seasoning
3 tbspminced garlic

Cooking Instructions

40 mins

Sweat the onion and celery till onion is translucent.

Add carrots and continue cooking for 4-5minutes

Add chicken and remaining ingredients and bring to a simmer for 25-30 minutes

Serve over tortilla chips ,garnish with cheese,and sour cream
