This chilli, garlic and ginger sauce is so lovely and fresh!

Ingredients

4 servings
  1. 4skinless salmon fillets
  2. 5 clovegarlic, peeled
  3. 1 piecepeeled ginger, about 6cm long, thumb thickness
  4. 2hot red chillies, heat of your own preference
  5. 2kaffir lime leaves
  6. 1 sticklemongrass, trimmed
  7. 2 tbspcoriander/cilantro leaves, finely chopped
  8. 100 gramsgranulated sugar / equivalent amount sweetener
  9. 3 tbspwater
  10. 50 mlrice wine vinegar / cider vinegar
  11. 1 tbsplime juice
  12. 1 tbspsoy sauce, see my Soy-Free Soy Sauce link below

Cooking Instructions

    Preheat the oven to gas 6 / 200C / 400°F and line a baking tray with foil, sprayed lightly with oil

  2. 2

    Put the garlic, chillies, ginger, lime leaves and lemongrass in a food processor and puree to almost a paste

  3. 3

    Put the sugar and water in a small saucepan and heat gently until the sugar has dissolved

  4. 4

    Let boil until the syrup has started to thicken

  5. 5

    Add the pureed ingredients and the coriander to the pan and cook through for 3 minutes, then stir in the vinegar, lime juice and soy sauce

    Place the salmon on the baking tray, brush some of the sauce over the fillets then bake for 15 minutes. Keep the remaining sauce warm

    Plate up and pour some of the warm sauce over each fillet

  8. 8

    Nice served with noodles or a salad
