Camarones Con Huevo (shrimp With Eggs)

My papi (daddy) Rarely ate eggs or shrimp for that matter since he's always watching cholesterol levels, but when he did eat eggs and shrimp this is how he liked them, scrambled with shrimp... Just plain and with beans on the side of course... The rest of the recipe is just what I do... Whatever is in the fridge and I can see it working, goes !! This is my first posting :) I hope you like !!

Ingredients

  • 12 mediumsize shrimp
  • 2Eggs (beaten) with a tablespoon of water
  • 1/4 cupGreen onion (chopped)
  • 6 smallcorn tortillas (small taco size)
  • Salt and pepper
  • 2 mediumRoma tomatoes
  • 1 mediumSerrano pepper
  • 2 cloveof garlic
  • 1 tbspRed onion (chopped)
  • 1/2 tbspSour cream
  • 1 bunchCilantro (to garnish)
  • Cooking oil
  • 1/2 tbspOlive oil

Steps

  1. 1

    Sauté shrimp and green onions on olive oil until shrimp changes color, flip.

  2. 2

    Add eggs, and cook throughly as if they were regular scrambled eggs. Turn heat off and cover.

  3. 3

    For the salsa: boil the tomatoes, garlic and Serrano in a small pot with enough water to cover these three ingredients. Once tomato skin comes off, it is ready. Turn heat off and carefully place in blender with a dash of salt. Blend for about two minutes in high speed.

  4. 4

    Las tortillas: Heat cooking oil, dip tortilla in salsa and fry, repeat procedure for all six of them, place the on paper towels to prevent oil excess.

  5. 5

    To serve: place three tortillas, add the shrimp and egg, cover with salsa, garnish with cheese onion, sour cream and cilantro (in that order.)
