Ingredients

6 servings
  1. 1 tbspolive oil
  2. 1 lbsmoked sausage, sliced (I used kielbasa, but you can use your favorite)
  3. 2 mediumonions, diced (1 1/2 cups)
  4. 2garlic cloves, minced
  5. 2 cupchicken broth
  6. 1(10 ounce) can mild Ro-Tel (diced tomatoes with green chilies)
  7. 1/2 cupheavy cream
  8. 1/2 tspsalt
  9. 8 ozuncooked penne pasta
  10. 1/2 tsppepper
  11. 1 cupshredded Monterey Jack cheese
  12. 1/3 cupthinly sliced green onions

Cooking Instructions

    In an oven safe skillet, heat the olive oil over medium high heat until very hot.

    Add the sausage and onions and cook until lightly browned, about 4 minutes, stirring often.

    Add the garlic and cook about 30 seconds.

    Add the broth, Ro-Tel, cream, pasta, salt and pepper.

    Stir.

    Bring to a boil, cover and reduce heat to medium low.

  7. 7

    Simmer until the pasta is tender and most of the liquid is absorbed, about 15 minutes.

    Remove from the heat and stir in half of the cheese.

  9. 9

    Top with the remaining cheese and sprinkle with the green onions.

  10. 10

    Place under the broiler for a few minutes until the cheese is melted, browned and bubbly.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
