Claires Chicken Tikka Masala

Ingredients

  1. 4chicken thighs
  2. 3/4 cupyoghurt
  3. 1lemon
  4. 1 largeonion
  5. 1thumb size piece ginger
  6. 1 tbspcorriander/cilantro paste or
  7. 2 tbspfresh corriander/cilantro
  8. 1sea salt and cracked black pepper
  9. 1 tbsppaprika sweet
  10. 2 cantomatoes whole or chopped
  11. 1 canevaporated milk
  12. 1 tspchili powder
  13. 2 tbspolive oil for frying
  14. 1 tbspbutter for frying
  15. 1Next ingredients are the Tikka Masala
  16. 1 tbsptomato paste
  17. 1 tbsptomatoe sauce/kechup
  18. 1 tspchili powder
  19. 1 tbspsmoked paprika
  20. 2 tspgaram masala
  21. 6 clovegarlic chopped
  22. 1inch size piece of ginger chopped
  23. 1 pinchsea salt
  24. 1 tspground cumin or seeds
  25. 1 tspcorriander/cilantro flakes or seeds
  26. 3 tbspolive oil
  27. 1 tspblack pepper cracked
  28. 1If you like real hot dishes add extra chilli to your own taste.

Cooking Instructions

    Chop chicken into small cubes,squeeze lemon juice add the yoghurt and the sweet paprika.Mix and marinate in fridge for 2 or 3 hours.

    Make the Tikka Masala paste next if using seeds toast them then put into pestle and mortar and grind till fine add all other paste ingredients.Grind and mix paste.

    In large heavy frypan add butter oil onions, chilli,ginger,corriander cook till soft.Add tikka masala paste and chicken.Add salt and pepper.

    Add milk and tomatoes.Fill the milk can with water and add that to pan.Stir,boil then simmer for about 20 mins with lid on.Check it dosent boil dry.

    To serve .Cook rice add lemon juice,zest and lemon black pepper.Cook peas add chopped garlic or garlic powder and butter.Cook and mash potatoes add mustard which ever type you like.
