Chilled drunken shrimp with a rich aroma of Shaoxing wine is a perfect appetizer for hot late-summer days.

Rinse the shrimp with a little salt. For a cleaner result, you can remove the vein.

Bring a pot of water to a boil. Add slices of ginger, lemon slices, and salt. Add the shrimp and cook until just done, then remove and immediately place in ice water to chill.

In another pot, combine Shaoxing wine, water, red dates, and goji berries. Bring to a boil, then let cool (or add some ice cubes to cool it down quickly).

Once the Shaoxing wine mixture is cool, add the cooked shrimp and let them soak. Refrigerate overnight before serving.
