Ingredients

  • 1 canblack beans
  • 1/3 cupcrumbled queso fresco
  • 2Roma tomatoes; diced
  • 1/2yellow onion; minced
  • 2 clovegarlic; minced
  • 1roasted red bell pepper; large dice
  • 1avocado; diced
  • 2limes
  • 1salt and pepper
  • 1vegetable oil; as needed

    Heat vegetable oil in a saute pan. Add onions. Sweat until nearly caramelized. Add garlic. Sweat until fragrant. Add tomatoes and bell pepper. Toss. Add black beans. Toss. Add avocado and juice of one lime. Toss. Season with salt and pepper.

    Garnish with crumbled queso fresco. Serve with lime wedge.
