Cooking Instructions
- 1
Add everything in, "The Basics & Starters," section in a thick bottom pot and simmer until cooked, about an hour. This will actually create a tasty, basic chili recipe on its own without any additions. °Authors Note: Purchase brands like [best] Tabasco Chili Starter, Caroll & Shelbys Or Wick Foweler's Chili Starter Kits. You can add the Masa packets included in most brand boxed kits to thicken your chili but I personally wouldn't. It tends to leave a dusty aftertaste.
- 2
Before cooking, decide if you'd enjoy any one of the other items listed in the additional meats, spices or fresh ingredients sections and add them to your pot as well.
- 3
Authors Note: If you choose to add meat, fry the meat and drain it first before adding it to your chili. Fry and add meat at the beginning of your boil.
- 4
Authors Note: If you do decide on adding several other ingredients to your chili, you'll DEFINITELY need to add additional chili powder to taste. Start with 1 tablespoon to your simmer, mix, taste, then add additional chili powder 1 teaspoon at a time until you've reached an acceptable level. Do the same with your Baking Soda [only if your chili has a metallic aftertaste] but 1/4 teaspoon by 1/4 teaspoon.

Mike's, "Not So Texas," Spicy Chili Mike's, "Not So Texas," Spicy Chili
Everyone knows true Texas Chili doesn't include beans or tomatoes. Only beef, homemade chile paste and few flavorings.Well, nuts to that! There's nothing I hate more than someone telling me what I should or shouldn't do in my own kitchen. This is precisely why I don't bake. There's just way too many rules going on in it for me. With that, I allow my students crazy little imaginations to literally run amok with their ingredients of choice. Today they did exactly that. Excellent work kiddos! You do make me proud! MMOBRIEN -

Mike's Pork Chili Verde Burritos Mike's Pork Chili Verde Burritos
FYI: Most Hispanics in Mexico don't wrap their foods up in a tortilla, "burrito style," like the US does unless they're on the run. What they will do at sit down meals is take warm flour tortillas - rip off a large piece and place their ingredients in a two bite sized portion and feed upon their dish that way. [see final photo] But, either way you choose to serve them is entirely up to you! This recipe may take some time but it's definitely worth your efforts! My seven year old students were up at 4:30 a.m. yesterday morning marinating pork and their efforts did not disappoint! Excellent work kiddos! In fact, they fed the homeless with them!Know that this dish is much better the following day and it freezes well for up to two months. This dish also makes for excellent oversized Taquitos and crispy assed Chimichangas! MMOBRIEN -
