My husband was staying away from bread and noodles so this was a great way to give him something filling. If making for more than one person then just double ingredients.

My husband was staying away from bread and noodles so this was a great way to give him something filling. If making for more than one person then just double ingredients.

Ingredients

  1. 1 cupground eland or italian sausage. whatever meat you prefer
  2. 3 piecethick sliced eggplant
  3. 1 cupmarinara sauce
  4. 2/3 cupgrated cheese

Cooking Instructions

  1. 1

    On high heat brown meat then lower heat to medium and add sauce. In another pan quick fry the eggplant slices then let dry on paper towel.

  2. 2

    Layer one piece of eggplant top with meat mixture and cheese, then repeat until done. You can place under broiler to melt cheese .

I love everything Spicy and I love cooking for my girls.My recipes will need to be tweaked sometimes depending on the heat or availability of veggies. Just go with your gut!!
