Sunday Nachos

Sundays are very special days. When my eldest daughter was little, she used to ask me, 'Mom, what do people do and eat on Sundays?' I always remember that question fondly. In short, very pleasant memories. Nowadays, Sundays, for me, and for many years, are days to stay at home, enjoy the simple things with the people who love you and whom you love, enjoy a simple meal that is still delicious. I am grateful every day for a hot meal on the table and the blessing of family.

In a large skillet, heat the oil, add the onion, and when it starts to pop, add the garlic and peppers, and sauté.

Mix the two types of meat well and add to the sauté. Let it fry thoroughly.

Once fried, add the grated tomato, salt, and let it cook for about 5 minutes, being careful not to let it dry out.

In a large dish, place a good layer of tortilla chips, add the hot beans, then the meat with the sauce, add the well-drained lettuce, and sprinkle with cheese and pickled peppers.
