This cous cous is one of the things I make every Christmas Eve but it's still sensational any time of the year

Ingredients

  1. 2 cupcous cous
  2. 2 cupchicken or vegetable stock
  3. 1 tbspbutter
  4. 1/2spanish/red onion, finely diced
  5. 3cloves garlic, crushed
  6. 1juice of 2-3 lemons
  7. 4 tbspolive oil, extra virgin
  8. 1/3 cuppistachio nuts, roughly chopped
  9. 1/2 cupcraisins (dried cranberries)
  10. 1/4bunch mint, roughly chopped

Cooking Instructions

  1. 1

    Bring stock to boil, take off heat and add in cous cous. Allow to sit for 5 minutes to absorb all liquid, add in the butter and fluff up with a fork and set aside

    Mix together the garlic, lemon juice and olive oil

  3. 3

    Place the cous cous in a bowl, stir through pistachios, craisins, onion and mint and as you're stirring it, drizzle through the juice mixture. Serve as a tasty side. Note: it's super quick if you crush the garlic in the food processor, followed with the onion and then the nuts
