Ingredients

  • 1 lbSalmon, skin removed
  • 1 tbspGreek yogurt
  • 3 tbspFresh cilantro (chopped)
  • 1 smallLime juice
  • 1 tspLime zest
  • 1/3 cupPanko Bread Crumbs
  • 1 cloveGarlic (minced)
  • 1Jalapeño (seeds and ribs removed, minced)
  • 2 tbspGreen onion (chopped)
  • 1 tspKosher salt
  • 1 dashHot Sauce
  • 1Black Pepper
  • 1 tbspVegetable Oil
  • cilantro-Lime Sauce
  • 1/4 cupGreek yogurt (Low fat)
  • 2 tbspLime Juice
  • 2 tbspChopped Cilantro
  • 1Salt and Pepper
  • 2 dashHot Sauce
  • To Serve
  • 1 largeAvocado (peeled, pitted, and sliced)
  • 1Handful of spinach or lettuce leaves (rinsed)
  • 4Burger Buns (split and toasted)
  • 1Hot sauce (for table)

Steps

  1. 1

    Chop the salmon into 1-2 inch chunks, and transfer it to a food processor.

  2. 2

    Add the Greek yogurt, cilantro, lime juice and zest,bread crumbs, garlic, jalapeño, green onion, salt and pepper, and hot sauce.

  3. 3

    Pulse several times to chop the salmon into small pieces and combine with the other ingredients.

  4. 4

    Form the mixture into 4 equal-sized patties, each about 3/5 inch thick. Chill at least 30 minutes, or for up to several hours.

  5. 5

    Meanwhile, whisk together all the ingredients for the cilantro-lime sauce. Cover and chill until ready to use.

  6. 6

    Heat the oil in a nonstick (or cast iron) skillet over medium-high heat. Carefully place the burgers in the skillet and cook 2 minutes. Flip, then cook an additional two minutes.

  7. 7

    Serve each burger on a toasted bun with spinach, the cilantro-lime juice, and sliced avocado. Pass the hot sauce at the table for serving.
