Ingredients

  1. 10 lbboneless pork butt or shoulder roast
  2. 4 tbspground or rubbed sage
  3. 3 tbspsea salt or canning salt
  4. 1 tspsavory
  5. 1 tspallspice
  6. 2 tbspground black pepper
  7. 1 tspground coriander
  8. 1 tspcrushed red pepper or more to your taste. we used 2 tsp.
  9. 1 tspthyme
  10. 2 tspmarjoram

    Set up meat grinder with course blade.

  2. 2

    Slice pork into 1 inch strips.

  3. 3

    Combine spices and mix half into pork strips.

  4. 4

    Grind seasoned pork into large bowl sprinkling remaining spice over ground pork.

  5. 5

    When all pork is ground and remaining spice added, place in refrigerator to chill.

  6. 6

    Replace course blade in grinder with fine blade.

  7. 7

    Regrind seasoned pork.

  8. 8

    Separate pork into packages and freeze or form into patties or links.

  9. 9

    Fry sausage over medium heat until browned on each side and cooked through. Or crumble and brown for you favorite casserole recipe.
