Gulgule making is a must during festival of diwali in Northern parts of India.
The Melt-in-the-mouth sweet /Fritters pakode or gulgule are made by deep-frying a batter of boiled and sweetened pumpkin, flavoured with cardamom. Whole wheat flour helps hold the batter together while coconut and fennel seeds intensify the taste and texture of the Gulgule.

Steps

Mix all dry ingredients in a bowl.

Combine the pumpkin and jaggery in a deep bowl and mix very well with a masher or your hands.

Add this mixture to all the remaining ingredients and mix very well with your hands.

Drop spoonfuls of the mixture into hot ghee in a deep pan and deep-fry a few at a time on a medium flame, till they turn golden brown in colour from all the sides

Drain on an absorbent paper and serve yummy hot pumpkin gulgule immediately.

My tip - Mash the boiled pumpkin while it is hot, and also add the jaggery immediately so the warmth will help it melt faster.
