General Tso Chicken

Ingredients

  1. 3 lbboneless, skinless chicken breast, cubed
  2. 2 cupgreen onions, sliced
  3. 8dried chilies, seeds removed
  4. 4 cupvegetable oil
  5. 3 cupbroccoli, steamed
  6. 2 cuprice
  7. ————Coating————
  8. 1/4 cupsoy sauce
  9. 1egg, beaten
  10. 1/3 cupwater
  11. 1 cupcornstarch
  12. ————Sauce————
  13. 1/2 cupcornstarch
  14. 1/4 cupwater
  15. 1 1/2 tspgarlic, minced
  16. 1 tspfresh ginger, grated
  17. 3/4 cupsugar
  18. 1/4 cuprice vinegar
  19. 1/4 cupwhite cooking wine
  20. 1 can (14.5 oz)chicken broth
  21. 1/2 cupsoy sauce

Cooking Instructions

    Cook rice according to directions. Reserve.

    Combine sauce ingredients into 1 quart shaker bottle.

  3. 3

    Shake to mix and refrigerate until needed.

    In a large bowl, combine coating ingredients. Mixture will be pasty.

    Add chicken to bowl and coat with slurry.

  6. 6

    Heat oil in deep saute pan to approximately 350°F.

    Use a fork to separate one piece of chicken at a time and place 7-8 pieces into hot oil.

    Fry until crispy.

    Remove fried chicken from pan, drain on plate covered with paper towels.

    Place small amount of oil in a wok over high heat.

    Add green onion and peppers, frying about 1 min.

    Shake sauce mixture, then add to onions and peppers.

    Cook until thickened and sticky.

    Add fried chicken and cook until boiling again.

  15. 15

    Serve with over rice with broccoli.
