"Chilean Style Rice"

Rinse the rice in cold water in a strainer to get rid of any extra starch to avoid sticky and not fluffy rice

Chop onion, bell pepper, dice garlic and thinly slice the carrot on an angle.

Once the garlic has been finely diced I like to cover it in salt and crush it into a paste using the side of my knife( not necessary)

Bring 1/4 cup veg oil to a simmer on a low heat and add all the vegetables. Low and slow so the garlic doesn't burn.

After the onions go translucent, add in the rice and stir all the ingredients together. Then add 4 cups of water, bring to a boil, cover, and reduce heat to low

After about 15 minutes it should be done. Pack the rice into a cup or mug and flip over for presentation. I alway use siracha on this rice it compliments it very well.
