Ingredients

1Orzo pasta
1/4 cupMediterranean flavored feta cheese
2 cupArugula spinach mix
1010 sliced olives of your choice. ( I used Greek)
1Several sun-dried tomatoes cut into pieces
2 tspCapers
1 cupOf an oil based salad dressing. ( I have used Mediterranean, but this time I used Greek dressing)

Steps

Bring a stock pot of water to boil. Cook the orzo pasta approximately seven minutes or until done. Drain and rinse with very cold water. Next combine all ingredients mix well and refrigerate until ready to serve. This salad is Best served cold.
