Homemade Pandan Extract for Coloring Cakes!

Pandan leaves are a popular ingredient for adding fragrance and a beautiful green color to cakes, jellies, sticky rice, and jams. In Vietnam, these leaves are easy to find, but abroad they can be quite expensive—about $5 for a 0.7 oz (20 ml) bottle. Making your own is convenient for regular use, and it makes a great gift for friends overseas, especially in Australia where pandan leaves are hard to find!

Choose mature pandan leaves with a deep green color for the best results.

Wash each leaf thoroughly under running water, then cut into small pieces.

Add 1 2/3 cups water (400 ml) and blend until smooth.

Strain the mixture through a fine mesh strainer.

You should get about 1 2/3 cups (400 ml) of pandan juice. Pour into a plastic bag and refrigerate for 1 day.

After 1 day, the pandan extract will settle at the bottom.

Pour off the liquid on top and strain again.

You now have pure pandan extract.

Store in the refrigerator for up to 2 weeks. Use it to make cakes, sticky rice, or as a natural food coloring. For a Pandan Cotton Cake, I used 1 tablespoon (15 ml) of extract for a deeper color. If you prefer a lighter, pastel green, use just 1 teaspoon (5 ml).

Here's a tip for making green pandan sticky rice: soak the glutinous rice in pandan juice for about 5 hours. Steam as usual until cooked, then mix in 2 tablespoons of concentrated pandan extract and 2 tablespoons of coconut milk, drizzle over the rice, and steam for another 5 minutes. The result is naturally green, shiny, and beautiful sticky rice! You can use the same method for other natural colors.
