Fried Muthokoi and potatoes

Legumes are awesome source of protein and when you have some Muthokoi ( maize without the hard outer skin)alongside them it makes an awesome healthy meal even for kids.Quite an an affordable African meal.

Legumes are awesome source of protein and when you have some Muthokoi ( maize without the hard outer skin)alongside them it makes an awesome healthy meal even for kids.Quite an an affordable African meal.

Fry the red onions and as usual I like the onions flavour so I don't let them cool til brown.Add in the cummin seeds and let them pop up their flavours in the onions

Add in the carrots stir fry slightly then add the potatoes and garlic and salt.Stir as they fry.Put on the lid and let them fry for last me ten minutes.Add the tumeric and stir

Add in the tomatoes stir then add in the Muthokoi in beans.stir the whole mixture for the Muthokoi to take up all the great flavours bursting out.

By now the potatoes are well cooked and the Muthokoi well fried add in a cup of water and right before they boil put in the coriander leaves(actually I usually finely cut even the stems while waste them flavours)

Your food is ready for serving.You can prepare a nice salad or steam some spinach and serve on the side.
