Ingredients

8 servings
  • 3boneless, skinless, chicken thighs cut into small bite sized pieces
  • 1onion, diced
  • 3 cloveminced garlic
  • 2 tbspchili powder
  • 4 tspcumin powder
  • 1 canof chopped green chilis
  • 3chopped chilis in adobo sauce (canned)
  • 2 tbspfresh chopped cilantro
  • 6 cupchicken stock
  • 2 cannavy beans

Steps

  1. 1

    Sauté chicken, garlic, and onions in a little bit of olive oil. While cooking, add your chili powder, cumin powder.

  2. 2

    Add the chopped green chilis, and chopped chilis in adobo sauce, give it a few stirs.

  3. 3

    Add the chicken stock and beans. Bring to a boil and turn down. Simmer for a couple hours. In the last 30 minutes, add your cilantro.

  4. 4

    Serve with some shredded cheese and a dollop of sour cream on top, if desired.
